Spaghetti Red Vongole e Gamberetti; Linguini al Pesto; Mango Sansrival by Amici
I'm constantly on the lookout for the most amazing pasta in basil pesto. This wasn't it. [But] it was enjoyable enough for the moment, especially after I covered it with parmesan cheese. I won't be surprised to find myself re-ordering this if I had to eat here again.
P.S. Minutes after this lunch, we found out that Nica (the one on the left) was pregnant! (WAH:) Among other things, I wonder what she'll be craving for. What are the usual / unusual cravings that pregnant women have? I can already predict what I'll be wanting -at least one of them... Chocajams! I've been longing for those since I left Australia in 2003. ;l
SIMPLE PESTO SAUCE RECIPE
1. Chop 3 medium cloves of garlic with 1/4 of 1 large bunch of basil leaves (washed & dried). Add up on the basil until all is finely minced.
2. Add half of a small handful of pine nuts, chop. Add the rest, then chop. Add half of 3/4 cup freshly grated Parmesan cheese, chop. Add the rest, & chop again.
3. Transfer the pesto to a small bowl. Cover & mix with a few tablespoons of extra-virgin olive oil, 2 or 3 may do.
F.Y.I., having a small & handy machine to do all the chopping will make your life easier.
